
As soon as ground frost has ended, sometimes until late May / early June, the first seeds and crops in Swedish Lapland are planted. The growing season is short but powerful; thanks to the midnight sun young green gets 24-hour sunlight. The first herbs and vegetables are ready for the big ‘midsommar ‘ harvest feast. For the ecological restaurant ‘Hulkoff garden’ it is a busy time. Chef Kurt cooks typical midsummer dishes from the region for his quests. The recipes he got from his mother Julia.
