‘La Scourtinerie’, founded in 1852 by Ferdinand Fert, produces filters for the extraction of olive oil and for the traditional wine press. The fourth generation produces still filters but especially tough coconut mats “Scourtins de Provence” for the home in all kind of natural colours. The production process is still largely the same as in 1882. Even the machines, drawn up in a charming Provencal house with blue shutters, are still virtually authentic. And each scourtin starts with a few drops of olive oil in the hands; a ritual that David Arnaud Fert learned from his ancestors.
